News in my personal life is going great, I made a friend at the pool and she is wonderful. I also met a super cute guy and he and I had a puppy play date(he has a boxer) and we are going on a date this weekend.

Interview

I had an interview with Xterra Wetsuits on Tuesday, I love the company! I have a second interview on Friday so wish me luck. I might just get a job!!
But I will say that the fella interviewing me seemed quite uncomfortable. Now I don;t know if it was because he doesn't ever interview anyone or because I am just so pretty! I chose to believe the later.

I also made quiche for dinner and I am proud to say that we ate all of it! There were no left overs. Here's my recipe try it out

QUICHE

Preheat the oven to 425F.

1 pastry shell (uncooked) in a large deep pie pan.

Spread mustard on the crust.

Sauté a handful of thin sliced onion (or add 2 tablespoons minced dried onion)

Saute - in one tablespoon of butter- a couple of handfuls of fresh spinach

OR cook and drain half a package of frozen spinach.

Add a handful of cooked crumbled bacon (10 pieces) or cubed ham.

½ cup to 1 ½ cups (your choice) of grated cheeses [gouda, cheddar, or swiss]. Toss with 1 tablespoon of flour.

Add the sautéed onion, bacon and spinach to the pie pan. Add the flour-coated cheese to the pie pan.

Combine (whisk till frothy):

6 eggs

1 cup of milk

½ teaspoon salt (optional if using bacon or ham)

1/8 teaspoon nutmeg

A quick shake/dash cayenne pepper

Pour custard into pie plate over all other ingredients.

Bake 15 minutes at 425f. Lower the heat to 350F and bake another 30 minutes OR until a knife inserted near the middle comes out clean. Serve warm or cold.

Denver

I have made it to Denver.
Tomorrow marks one week!!

My last week in SLC was amazing and full of fun surprises. There were lots of BBQ's, dinners and lunches as I said goodbye to my most amazing friends.

We went out to bars, went to see a few movies and even made it to a country concert. Tim McGraw was outstanding!! I loved every minute of my last week.

Now being in Denver feels like one big vacation. I am trying to find a job and I continually apply for new jobs and I have to say that it is finally paying off. I have an interview tomorrow with Xterra Wetsuits! I am excited about the opportunity they seem like a super fun company to work for! I'll keep you posted on how that one goes.

As far as my personal life goes. The lonely has started to set in. I miss my friends and I miss having someone to snuggle with when you watch a movie. I have been talking to a boy in Utah and I feel like I am just setting my self up for disaster. I don't believe in long distance relationships because it hurts to be so far away from someone you care about. But this could also be the start of a very great friendship...
